I haven’t had lomito arabe in over eight years, and it brought back so many memories. The late night soccer matches, 4:00 AM talks, and the smell of diesel in the air. Ahhh.  In Leftovers, I will be mindful of the ingredients we used in The Journey, while also not using too many other ingredients we need to go find and buy.

I still frequently visit Paraguay, as my parents are missionaries there. I believe Paraguay is a beautiful country and the people are kind, hardworking, and proud. Their simple life is a needed break I cherish every time I visit. With many aspects of a third world country, they are slow with much modernization and food is influence mainly by neighboring countries. Don’t get me wrong, the food and culture in Paraguay is exquisite, and I am honored to share a recipe that I called home for a few years.

With so much spices, sauce, and meat left over we decided to create a salad or a bowl. You can literally put that sauce ANYWHERE so we will be using it for both salad and bowl. The only difference we will make here is if you decide to make a salad, hard boil your egg and let it cool. If you do decide to use a bowl and use rice, we recommend you pan fry your eggs and make a mess with the delicious ooze!

Tenderloin Salad Bowls

Lomo bowl or salad is a quick and easy recipe with tenderloin, fresh vegetables, rice and a creamy Mediterranean sauce. Make this low carb or not, it will be delicious!

prep time: 5 minscook time: 10 minstotal time: 15 mins

ingredients:

  • 1 cup beef
  • 1/2 cup rice
  • 1 cup lettuce (shredded)
  • 1/2 cup cabbage (shredded)
  • 1/4 cup tomato (diced)
  • 1 egg
  • lomito arabe sauce

instructions

  1. Pan fry egg so that the yolk is runny.
  2. Preheat leftover beef, cabbage, onion mix in pan (Lomito Arabe recipe)
  3. Have rice in a bowl.Shred lettuce and cabbage, and dice tomatoes and put on top of rice
  4. Add the lomo on top, then the egg, then add sauce on top
Tips
  1. For a salad, instead of rice, add one more cup of shredded lettuce
  2. Instead of pan frying an egg, with cold water, cover the egg about an inch and bring to a simmer. Once it reaches to a simmer, medium-high heat, time 7-8 minutes and take out. Cut it in half and place in bowl.
  3. Add sauce to your liking
