This might be the most obvious leftover recipe I’ve made because you are using everything from the previous post to create this keto egg salad recipe. If you haven’t made the deviled eggs in the previous post, then don’t worry! Instead of candied bacon, we will just pan fry bacon and add some avocado for some extra deliciousness.

Keto Egg Salad

This is the most simple and tasty keto egg salad recipe you can make, especially if you have some deviled eggs leftover!

ingredients:

  • 12 hard-boiled eggs
  • 3 bacon strips
  • 2 tbsp Dijon mustard
  • 1 tsp tobasco
  • 1/2 tsp red wine vinaigrette
  • 1/3 cup mayo
  • 1 tbsp shallot
  • 1 tbsp parsley (minced)
  • 2 tbsp green onion
  • 1 tsp lemon juice
  • 1/2 tsp paprika
  • ½ avocado (diced)
  • Salt and pepper to taste

instructions:

  1. Cook bacon strips on a pan. After thoroughly cooked, place to the side to let cool. Once cooled, cut them into bits.
  2. Get a pot and place the eggs in there and pour water until covered and bring to a boil. Remove from heat, cover, and let it sit in the hot water for about 12-15 minutes. Remove the eggs and put in an ice water bath
  3. Remove the shells and cut it in half, vertically, and dice them to your desired portion.
  4. Add the remaining ingredients together and add fresh green onions and pepper on top and put in refrigerator or serve immediately.
Tips
  1. EASY way to peel hardboiled eggs: crack against edge couple times around the shell. Then, applying a little pressure with your palms, roll them around your cutting board. You will be able to peel them SO much faster!
  2. For the sandwich, I toasted an organic wheat bread, but you can use any bread you’d like.
  3. For the sandwich, I used fresh tomatoes and cucumbers to give it a nice crisp and refreshing taste that would complement the egg salad perfectly.
